                                 S’mores Pancakes

Ingredients

  • Graham Cracker Chocolate Chip Pancakes 

  • 1 Cup all purpose flour
  • 1/2 cup crushed graham crackers
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg, beaten
  • 1/2 cup semi-sweet chocolate chips
  • Marshmallow Syrup

  • 1 cup marshmallow fluff
  • 2 tablespoons warm water

Instructions

  1. Graham Cracker Chocolate Chip Pancakes 

  2. In a large bowl, whisk together the flour, graham cracker crumbs, baking powder, and salt. Then Stir the milk, beaten egg, and chocolate chips, mixing until incorporated
  3. Pour 1/4 cup of batter onto a heated griddle and cook each side until lightly browned
  4. Marshmallow Syrup

  5. In a medium bowl, stir together marshmallow fluff and water until smooth. If the syrup is to tick, thin with more water. If desired, warm In the microwave for 10-20 seconds, or until warmed (the marshmallows will expand, so be prepared for this)

image                        Strawberry Funfetti Pancakes

       Ingredients

  • 1 cup all purpose flour
  • 2 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup of whole milk
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 tbsp butter, melted
  • 5-6 medium sized strawberries, sliced
  • sprinkles of your choice

     Instructions

  1. In a small bowl, mix together milk, egg, and vanilla extract. In a separate bowl, mix together the flour, sugar, baking powder, and salt.
  2. Make a well in the flour mixture and pour in the milk mixture, mixing well and then adding in the melted butter and stirring until combined
  3. Heat a saute pan over medium-low heat and butter or spray it with cooking spray. Once hot, scoop 1/2 cup of batter into the pan. Immediately lay 3-4 strawberry slices on each pancake, gently pressing each one in. Sprinkle with sprinkles and let it cook for about 2 mins or until golden brown, flip to the other side and cook for another 1-2 mins.
  4. When ready to serve, place strawberry side up and sprinkle with confectioners sugar if desired.

                                   Cannoli Pancakes

    Ingredients

  • 2 c. heavy cream
  • 1/3 c. powdered sugar, plus more for garnish
  • 1 tsp. cinnamon
  • pinch of nutmeg
  • 1 c. ricotta
  • 2 c. mini chocolate chips, divided, plus more for topping
  • 1 box Bisquick, plus ingredients called for on box
  • 1 tbsp. butter
  • 1/4 c. Powdered sugar, for dusting
  • Whipped cream, for garnish

    Instructions

  1. In a large bowl using a handheld mixer, beat together the heavy cream, powdered sugar, cinnamon and the nutmeg until stiff peaks form. Fold in ricotta and 1 cup chocolate chips. Set aside.
  2. Now Make The pancakes according to box instructions, with the addition of the remaining cup chocolate chips.
  3. In a large skillet over medium heat, heat butter. Make large pancakes, then stuff with ricotta mixture and fold like a cannoli.
  4. Garnish with powdered sugar, whipped cream and more mini chocolate chips. Serve!

                           Apple Cinnamon Pancakes

Ingredients For Pancakes

  • ¾ cup milk
  • 1½ tablespoons vinegar
  • 1 cup flour
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon (if desired, you can add another 1/2 teaspoon of cinnamon)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • 2 tablespoons oil
  • Apple Topping

  • 2 tablespoon butter
  • 2 apples, peeled, cored, and diced
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ⅓ cup maple syrup

     Instructions

  1. Preheat a skillet to medium-high heat (275 degrees).
  2. Whisk together the milk and vinegar and allow to rest for 5 minutes.
  3. While milk is curdling, whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  4. Whisk egg and oil into milk. Add wet ingredients to dry ingredients and stir until combined (don’t over-mix, it should still have some lumps).
  5. Spray skillet with cooking spray. Use a ¼ cup measuring cup to pour batter onto skillet. Cook about 2 minutes until bubbles form and the edges start to look “dry”. Use a spatula to flip the pancake and cook another 1-2 minutes on the other side. Set pancakes aside and repeat with remaining batter.
  6. Add butter, apples, brown sugar, and cinnamon to a medium sauce pan. Stir over medium heat 3-5 minutes until apples are very tender. Stir in syrup. Serve apple topping over warm pancakes.

                                   Classic Pancakes

Ingredients

  • 1-3/4 cups flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1-3/4 cups milk
  • 1/4 cup coconut oil, melted butter or good quality vegetable oil

     Directions

  1. In a large bowl, combine dry ingredients with wire whisk. In a small bowl, with an electric mixer, combine eggs, milk and oil. Slowly add wet ingredients to dry ingredients. Hand mix only until large lumps are gone.
  2. Heat the pancake griddle or large frying pan. Lightly grease the pan. Use a 1/4 cup measuring cup to pour the pancake batter in the pan. It should form round circles of pancakes. Bake them in the frying pan until bubbles appear around the slightly brown edges.
  3. Flip the pancakes and cook them for a minute or so longer.
  4. This recipe makes about 16 4-inch pancakes.
