                                 Frozen Fruit Pops

         Ingredients

  • 1/2 cup sugar
  • 1 bag frozen mangos
  • Juice of 1/2 lime
  • 1 bag frozen strawberries
  • Juice of 1/2 lemon

     Directions

  1. Combine 1 cup of water with the sugar in a small saucepan. Turn the heat to medium and let it warm while the sugar dissolves.
  2. Pour half the sugar syrup into a blender with the frozen mangos and lime juice. Puree until totally smooth. Pour the mango mixture into the bottom quarter of some ice pop molds and freeze for 20 minuets.
  3. Repeat With Another Layer Of Mango And Strawberry. Freeze Until Solid.

                            Strawberry Sundae Bites

       Ingredients

  • 12 large strawberries
  • Reddi Whip
  • Chocolate Sauce
  • Rainbow Sprinkles
  • 12 Maraschino Cherries

     Directions

  1. Cut the tops of the strawberries then use a melon baller to core the centers. Cut a small amount off the bottom of the strawberries as well, to help then stand.
  2. Fill each strawberry with whipped cream, top with chocolate sauce and garnish with sprinkles and a cherry. Serve.

                       Blackberry Lime Cream Puffs

         Ingredients

  • 6 oz. cream cheese, room temperature
  • 1/3 c. granulated sugar
  • 1 tbsp. fresh lime zest, plus more for serving
  • 1/2 tsp. pure vanilla extract
  • Pinch kosher salt
  • 2 1/2 c. fresh blackberries, divided
  • 1 c. heavy cream
  • 24 (2-inch) store-bought profiterole shells
  • Confectioners’ sugar, for the garnish

     Instructions

  1. Whisk the cream cheese, sugar, lime zest, vanilla, salt, and 3/4 cup berries on medium speed with a mixer until creamy and berries are broken down, 1 minute. Increase speed to medium-high, add cream, and beat until whipped, about 1 minute. Transfer to a pastry bag fitted with a medium-sized pastry tip or zip-top bag. Chill 2 hours or up to 1 day.
  2. Snip a hole in the corner of the zip-top bag, if using. Split profiteroles and pipe blackberry filling on bottom halves, dividing evenly. Top with remaining 1 3/4 cups blackberries and lime zest. Sandwich with profiterole tops. Garnish with confectioners’ sugar. Serve immediately.

                   Chocolate Covered Strawberries

         Ingredients

  • 1 pt. strawberries
  • 2 c. semisweet chocolate chips
  • 2 tbsp. coconut oil

     Instructions

  1. Line a large baking sheet with parchment paper. Rinse strawberries and pat dry with paper towels.
  2. In a small microwave-safe bowl, combine chocolate chips and coconut oil and microwave in 30-second intervals, stirring in between, until completely melted.
  3. Dip the strawberries in chocolate and place on prepared baking sheet.
  4. Refrigerate until chocolate is set, about 30 minutes.

                          Chocolate Covered Watermelon

     Ingredients

  • 1 small seedless watermelon, cut into small 1/2″ wedges
  • 2 tbsp. coconut oil (optional)
  • Flaky sea salt

    Instructions

  1. Line a baking sheet with wax paper. Spread out watermelon pieces on prepared baking sheet and freeze for at least 1 hour or covered up to overnight.
  2. If using, stir coconut oil into melted chocolate.
  3. Remove the watermelon from freezer and dip each piece in melted chocolate. Sprinkle with sea salt and return to baking sheet. Serve immediately or freeze covered until ready to serve.
